Cheddar Apple Muffins

Yields: 12 muffins

Prep. Time: 10 mins

Cooking Time: 25 - 30 mins

 Ingredients:

3 cups (750 mL) Plain flour             

2/3 cup (150 mL) sugar  

4 tsp (20 mL) baking powder      

1 tsp (5 mL) salt

1 tsp (5 mL) ground cinnamon   

1 1/2 cups (375 mL) shredded cheddar cheese  

2 eggs  

1 cup (250 mL) apple juice           

1/2 cup (125 mL) butter, melted

2 cups (500 mL) finely-chopped pared apple

 

 

Preparation:

Combine flour, sugar, baking powder, salt and cinnamon in large bowl. Add and mix in cheese.

Beat eggs with apple juice; stir in butter and apple. Add all at once to flour mixture; stir just until moistened.

Divide batter among 12 large greased muffin cups.

Bake 375 ºF (190 ºC) oven 25 to 30 minutes.

Serve warm with butter.
