The dry natural rind darkens from the yellow to speckled dark brown with age. The ivory to light yellow colour interior with cherry sized holes has a smooth sliceable texture that becomes crumbly with age, the initial nutty flavour becoming rich & spicy.

A sweet Swiss cheese with hushed tones of fresh-cut hay, a fruity flavour and mouth-tingling acidity. Ideal for grilling and fondue and sharing with friends and a bottle of Semillon.
