Pecorino Pepato

The Pecorino Pepato is native to the town of Ragusa in Southern Italy. It is made from the milk of sheep that graze in the arid lands where the olive trees grow and is a very popular table cheese. There is a black peppercorn layer incorporated in its pate (dough) which also makes for a wonderfully natural flavoured Pecorino for grating / shaving over the simplest of pasta dishes and soups.
