Le Delice De Bourgogne
This is a triple cream cows milk cheese from Bourgogne in France - simply translated as the "Delight of Burgundy". Delice is covered with a fine fluffy white mould which when allowed to ripen", will soften the outside of the cheese leaving the middle firm. The pate is soft, sweet and buttery and with a pleasantly salty flavour. The length of affinage is usually short. This cheese is very similar to Saint Andre triple creme. Triple cream has a minimum fat content of 75%, whereas double cream is usually around 60 to 70%. This is achieved by cream being added to the milk stock during curd production. A must for brie lovers - it just melts in your mouth.
