Named after the small port of Edam, just above Amsterdam. This is a pressed, semi soft or hard cheese in the shape of a ball. Most Edam is still produced from skimmed or semi skimmed milk. The texture is supple and elastic and the flavour is mild, sweet and nutty. An easy cheese to accompany any wine or beer.
A young Edam tastes very soft, a bit sweet with a nutty flavour. As the cheese ages, it will have a nice strong flavour, bit dryer and saltier than a Gouda.
Matured it is great for grating.
